Salmon Scramble Toast

  • 2 eggs
  • Nonstick spray
  • 1 oz lox
  • 2 slices of wheat free or gluten free toast
  • 2 Tbsp low fat cream cheese
  • 1 medium tomato, sliced


  1. Beat eggs in a small bowl.
  2. Spray medium skillet with nonstick spray and place over medium heat. Pour eggs in pan and add lox. Scramble together until eggs reach desired consistency.
  3. Spread toast with cream cheese. Top each slice with tomato slices and egg mixture. Eat open faced.
